One of the most popular Sauces the Greek is the metaxa sauce. You refined Recipes with meat like suflaki or gyros and is also suitable for gratinating. Making them yourself is a bit more time-consuming but not rocket science. Originally in Greece the sauce is cooked with yoghurt. In Greek restaurants in this country, cream is usually used instead of yogurt.

  1. Chop the garlic. Cut the clove of garlic very finely with a knife. Then pour the salt over the garlic cubes.

  2. Make garlic and salt paste. Use the blade of the knife to press the garlic cubes with the salt into a paste.

Cook metaxa sauce like the Greek

By Boiling down over medium heat, reduce the seasoned meat stock to a third. Depending on the size and quantity of the pot, this can take a few minutes.

  1. Add yogurt. Stir the yogurt into the reduced meat stock. To do this, take the pot off the stove.

  2. Refine with Metaxa. Pour in the metaxa and stir the metaxa sauce well. She shouldn't cook anymore.

  3. To taste. Finally, season the metaxa sauce with salt, pepper and lemon juice.

If you want to cook the Germanized version of the metaxa sauce, like the Greek around the corner, replace the yogurt with the same amount of cream. This is not added at the end, but rather boiled down together with the meat stock. That makes the sauce smoother. Finally, just add spices and metaxa to taste.
