Why do you say roast?

The noun brät has nothing to do with the roast meat to do. It is a minced meat mixture with spices. It is the technical term from the meat industry for that viscous mass that is mainly filled in sausage casings (eg. B. sausage meat). The word "Brät" has its origin in the Middle High German language (gebræte = Meat). A synonym for sausage meat is sausage dough.

What do you need meat for?

To one Sausage to prepare, the meat must first be minced. This allows the meat to be mixed with salt, spices and other ingredients into a porridge. For this comminution, the butcher's trade uses a meat grinder, a cutter and, if necessary, a used a batch machine. The finished sausage meat is usually filled in natural or artificial casings with the help of a filling machine. However, there are also variants to process the sausage meat differently. Is meat always raw?

The condition of the sausage meat depends on the type of sausage. With raw sausages such as salami or boiled sausages such as bratwurst, the meat is always raw. With boiled sausages such as black pudding, the meat is only viscous when it is warm and pre-cooked.

Can you eat roast?

In the butcher's trade, small taste tests are customary for employees. One should, however, distance oneself from eating sausage meat. Consuming large amounts of raw meat can have health consequences. Due to the fact that sausage meat is mostly raw meat, the sausage dough is often heavily contaminated with germs. Only the scalding of a boiled sausage meat and the maturing of a raw sausage meat makes the sausage microbiologically harmless and durable. Even pre-cooked, warm boiled sausages such as black pudding or liver sausage should only be eaten fully cooked through.

Unless you're visiting a butcher's shop, you'll rarely see Brät. However, there are products with raw meat to buy. For example, meat loaf to bake at home or sausages with raw sausage meat are becoming increasingly popular. No matter which meat you choose, always remember to cook it through!
