Difference: starch and glycogen

You can only find starch in plants, glycogen now in animal organisms. But what is the difference between the two fabrics? It's not that easy to explain.

How starch becomes glycogen

  1. In most plants, water-soluble sugars are converted into water-insoluble starches. From a chemical point of view, they are polysaccharides (C.6H10O5)n. So they consist exclusively of C6H10O5Molecules.
  2. This substance is broken down into glucose by enzymes in the animal organism. When glucose is to be stored in the animal organism, glucose is converted into glycogen.
  3. For this purpose, the glucose molecules are attached to the protein glycogenin. This creates a branched tree structure from C6H10O5Molecules. The substance also consists of glucose, but this is arranged around the protein. This substance is also insoluble in water and serves as a reservoir. Due to this structure, this storage can now be broken down much more easily and faster than the starch.

Both substances are therefore carbohydrates, since the molecules are made up of carbon and water. Both are also polysaccharides that are made up entirely of glucose. You can think of it as breaking the building blocks of starch apart and rearranging them into glycogen.

Differences between the two fabrics

  • Glycogen is only found in animal cells and fungi. It is built around a protein in a tree structure. This branching causes iodine solution to turn red. This tells you that this substance is present.

  • Starch has a helical unbranched structure. It consists exclusively of chains of glucose molecules and occurs only in plant organisms. When you add iodine solution, it turns blue to black.

You see, although both substances are made up of glucose molecules, there are chemical differences because these molecules are arranged differently. The main difference is in the branching.
