Make beef roulade sauce from cooking residue
Freshly made beef roulades taste particularly good when served with a homemade sauce. You can make the sauce yourself using the residue.
What you need:
- For the first variant of the sauce:
- Flour for dusting
- 2 tbsp butter
- 250 ml beef broth
- 2 onions
- Paprika powder
- salt
- pepper
- For the second sauce variant:
- 1 bunch of soup vegetables
- 250 ml beef broth
- 250 ml red wine
- salt
- pepper
Prepare a sauce for beef roulades
If you want to make beef roulades for food, you can conjure up a delicious sauce from the cooking residues.
- To be able to prepare the sauce, you must first take the beef roulades out of the pot or the roaster and keep them warm in the oven.
- Next, you can fry the diced onions in the fat of the beef roulades.
- Then take the onions out of the pot and dust the residue with a little flour.
- Then pour the beef broth into the pot and stir the liquid well so that the cooking residue loosens from the bottom and does not form lumps.
- Then you can put the onions back in the pot and add the butter.
- Season the sauce with paprika powder, salt and pepper and let it boil for 10 minutes.

Cook a suitable sauce with red wine
You can also use the residues from the beef roulades red wine boil down. The sauce tastes particularly delicious.
- To prepare this sauce, take the beef roulades out of the pot first.
- You can then sear a bunch of soup greens, which you have to roughly chop up beforehand, in the saucepan.
- After searing the vegetables, you can take them out briefly and then dust the bottom of the pot with flour. This makes it easier to loosen the roast set afterwards.
- Now put the red wine and the beef broth in the pot and pour that vegetables added again.
- Let the sauce soak for approx. Simmer for 1 hour.
- Finally, you only need to pour the sauce through a sieve, season with salt and pepper and cook again for approx. Bring to the boil for 5 minutes.
