  • 2 teaspoons vanilla sugar
  • 1/2 teaspoon lemon juice
  • 150 g powdered sugar

  • 300 g blueberries

 Unusual cake recipes: raspberry mascarpone cakes

  1. Preheat the oven at 180 degrees. Then only grease the bottom of a springform pan, not the edge, and then sprinkle it with a little flour.
  2. The next step is to get the Eggs to separate, then add a pinch of salt to the egg white and then beat it until stiff. When beating stiff, add sugar gradually over and over again. Add half of the sugar.
  3. Meanwhile, whip the egg yolks with the rest of the sugar until frothy.

  7. Then take out the mold. Let that cake cool for about 10 minutes. And then carefully cut it out of the shape.
  8. The floor needs to be properly cooled before you cut it twice across.
  9. Now comes the filling, finely puree 150 g of the raspberries. Incidentally, put the gelatine in the cold for 10 minutes water soaking.
  10. Then squeeze out the gelatine and dissolve it in a saucepan with 3 tablespoons of water, then take it off the flame and let it get lukewarm.
  11. Then the cream is whipped until stiff, the gelatine is lifted underneath and the powdered sugar is also stirred in. Mix half of this mixture with the raspberries.
  12. Now the bottom parts are coated with mascarpone and covered with the remaining raspberries. Then pour the rest of the cream over it.
  13. Then the cake bases are put together.
  14. Finally, coat the cake with the raspberry cream so that it becomes the shell of the cake. Then place the cake in the refrigerator until it is ready to serve.

Meringue cake - an unusual recipe idea

  1. Preheat the oven to 100 degrees top and bottom heat.
  2. Then a baking sheet is lined with parchment paper, on which a circle is drawn using a springform pan.
  3. Now the egg white is put in a mixing bowl and beaten until stiff. Incidentally, keep adding sugar, salt, vanilla sugar and lemon juice.
  4. Mix the powdered sugar and starch and add to the egg whites, then the meringue is poured into a piping bag (it should have the largest possible hole).
  5. Now take the piping bag and spirally draw a circle on the baking sheet so that you are squirting a round bottom.
  6. The floor now has to dry in the oven for 8 hours. Leave the oven door ajar. Then let the bottom cool down on a grid.
  7. Now the blueberries are washed and dried.
  8. Then whip the cream with sugar and vanilla sugar until firm. Add cream stabilizer as a tip, it will be faster. Also stir in the raspberry brandy.
  9. Finally, brush the meringue base with cream, apply thickly, and then top with the blueberries.
  10. An unusual cake is ready.

 A really unusual cake: the espresso cake

  1. First line a bowl with cling film.
  2. Mix the egg yolks with sugar and vanilla sugar in a bowl with hot water (with an electric hand mixer), approx. 5 minutes until creamy. Then take the bowl / saucepan off the stove and continue beating for 2 minutes. Then add espresso in sips.
  3. Now the cream is whipped until stiff and gradually lifted into the espresso mass.
  4. Then place the mixture in the cling film bowl and place in the freezer for 3 to 4 hours.
