  • For the preparation of a healthy soup with asparagus peels, you should use organic quality or products from a farmer with known cultivation methods. This allows you to largely exclude pollutants.
  • If you cook a few sticks of the vegetables in the pre-cooked asparagus stock, the soup gets even more of the typical taste.

A sophisticated soup for four people

  1. Make the vegetable broth. Put the washed asparagus peels in a large saucepan and stir in a tablespoon of butter, sugar and a good pinch of salt. Fill up with the prepared vegetable stock and let it cook for 25 minutes. Drain the cooked shells through a sieve.
  2. Melt the remaining butter in the saucepan. Let the flour slowly trickle in while stirring and sweat until lightly. Pour the roux with the broth from the asparagus peels (while stirring). After the soup has boiled, remove the saucepan from the hot plate.
  3. Put in the white wine. Season to taste with salt, pepper and nutmeg. Wash and chop the parsley / chives very finely.
