If you want to eat your own personal ice cream, you have to make it yourself. Ice cream works particularly well if you prepare it in an ice cream machine such as the Laser 2000 from Westfalia, in which you can even make two different types at the same time.

What you need:

  • vanilla icecream
  • 200 ml of cream
  • 125 g mascarpone
  • 1 egg yolk
  • Pulp of a vanilla pod
  • 50 grams of sugar
  • 1 vanilla sugar
  • Lemon ice cream
  • 150 ml of fresh lemon juice
  • 350 g natural yogurt
  • 120 g powdered sugar
  • 2 egg whites
  • a pinch of salt

Basics about ice machines

  • If you want to make ice cream, you have to freeze the ingredients, everyone knows that. Theoretically, you can freeze almost any liquid or cream into ice, you can do that without an ice machine, but the ice tends to crystallize and harden when it freezes. You can only prevent this if you constantly stir the mass during the freezing process. That is exactly what the ice machine does. This is also the function of the Laser 2000 from Westfalia.
  • The better you have whipped it into a cream, the creamier the ice cream will be. For example, if you only pour strawberry yogurt, you won't get creamy strawberry yogurt ice cream.
  • There are ingredients that make the consistency of the ice cream worse or make it almost impossible to make an ice cream. For this reason, you should only add alcohol very sparingly, because alcohol prevents freezing.
  • Other ingredients help you get creamy ice cream. This is how you can improve the consistency of the ice cream using commercially available ice powder. Egg also improves the freezing properties of the ice. For fruit ice cream you should add egg white, for milk and cream ice cream the yolk.
  • Inexpensive ice machines for the household usually do not contain cooling; they're just agitators that keep the ice creamy as it freezes. Some cheap machines have to be put in the chest while you are making ice cream. The Westfalia Laser 2000 does not get into the cooling - with this ice machine you freeze the bowls beforehand. So it stores the cold and removes the heat from the mass when it is being prepared, so the ice freezes.

  • Make sure you only pour in a very cold mass that has almost reached freezing point, because if you pour the mass at room temperature, the cooling will not be sufficient to make ice cream out of it.

Making vanilla and lemon ice cream in the Westfalia Laser 2000

  1. The Laser 2000 has two containers so that you can make two types of ice cream in the Westfalia ice cream machine at the same time. Pre-cool the containers in the chest or cupboard for at least 12 hours.
  2. Mix the yogurt, lemon juice and 1/3 of the powdered sugar. Stir the mixture until creamy before adding it for an hour refrigerator place. Beat the egg white with the remaining sugar and a little salt until it shows tips. Fold the egg whites into the lemon yogurt mixture. Chill the mixture until you pour it into the ice maker.
  3. Mix the egg yolks and cream in a tall bowl. Beat the mass vigorously with the hand mixer. Add the vanilla pulp, sugar and vanilla sugar. Beat the mass vigorously. Then stir in the mascarpone. Put the mixture in the refrigerator or in the freezer for a maximum of ten minutes.
