Recipes for hollandaise sauce - how to prepare it

  1. The lemon is squeezed and the peel is rubbed off.
  2. The butter needs to be cold before you can cut it into pieces.
  3. In a saucepan, mix the two egg yolks with 3 teaspoons of lemon juice, the zest, a little salt and pepper and a pinch of sugar.
  4. On the stove over medium heat, everything should be heated with a whisk while stirring and beaten until a thick mass is formed.
  5. Gradually fold in the butter cubes and finally stir in the yogurt.
  6. Season again to taste and, if necessary, add a little more seasoning and then serve hot.
