Make your own strawberry puree
Aromatic varieties are best for strawberry purée. It is ideal if they come from your own garden or are picked in a field yourself. If you buy the fruit, give preference to locally sourced strawberries or organic produce. In addition, strawberries are one of the fruits that usually only taste really good in their season. Be sure to check the taste before you start processing.
- Wash the berries under cold water then drain them in a colander. Use a sharp knife to remove the stems and any brown spots.
- Puree the strawberries with a hand blender or put them in a blender to puree. You can keep some fruits for decoration if you want.
- Then add a little sugar and lemon juice to the strawberry purée, depending on how sweet you like it. If you're keen to experiment, you can also try a bit of cinnamon or lemon peel.
- You can now use the puree for dessert straight away. It goes well with vanilla ice cream, various types of pudding or homemade dumplings, for example. If you prefer it hearty, strawberry puree can also be a savory addition to salads or asparagus dishes.
- To preserve a taste of summer, the strawberry purée can also be frozen in small portions. A visually particularly appealing variant is to freeze the puree in ice cube form and use it to spice up drinks later.
