Top chefs swear by iron pans. Which of them, cast or stainless steel, does not matter. You can heat iron pans to a maximum. These models are ideal for searing meat or vegetables. You will only have to spend more time cleaning, as residues will often remain on the bottom of the pan. And since the pans work best on high heat, they are less suitable for gentle cooking processes.
