A hearty cheese, leek and minced meat soup tastes really delicious with fresh minced meat. Vegetarians do not have to do without this delicious soup - and also not the meat. To do this, simply replace the mince with vegetarian tofu bolognese, as this recipe shows.

What you need:

  • For 2 to 3 people:
  • 1 small vegetable onion
  • 1 to 2 leeks
  • 250 g tofu
  • 2 tbsp soy sauce
  • 100 ml of wine
  • 500 ml vegetable stock
  • 150 g cream cheese
  • 100 ml crème fraîche
  • salt
  • pepper

Prepare cheese, leek and minced meat soup with tofu bolognese

  1. First, wash the leeks off and cut them into rings. Then cut the vegetable onion into cubes. Sauté both in a pan with a little olive oil over low heat.
  2. In the meantime, prepare the vegetarian minced meat. To do this, mash the tofu into small pieces with a fork. Before frying the tofu, stir it with a little soy sauce and let it steep for a moment.
  3. Note: Of course, you can cut the tofu into cubes an hour in advance and marinate with soy sauce so that it is nice and spicy later.
  4. Then fry the tofu minced meat in a separate pan with a little olive oil and season with salt and pepper.

Add the tofu at the end

  1. Now delete that vegetables with the white wine and gradually add the vegetable stock. Let the soup simmer for about ten minutes so that the vegetables are cooked through.
  2. Then add the cheese and let it melt in the soup. It is best to stir the cheese and leek soup with a whisk so that no cheese lumps form. When the cheese has dissolved, add the crème fraîche.

  4. Let everything simmer for another ten minutes and only add the seared tofu mince at the end, otherwise it will be too soft.
