Ingredients:

  • 150 g dark chocolate
  • 3 eggs (2 separated)
  • 1 tbsp rum
  • 1 tablespoon of sugar
  • 250 g cream, whip until stiff

A mousse au chocolat recipe like a star chef

  1. Break or cut the 150 g dark chocolate into small pieces and place them in a bowl together with the two egg yolks and one whole egg. Important: You will also need the two proteins later, so please do not throw them away.
  2. Now place the bowl in a hot water bath and melt the ingredients while stirring constantly - this is best done with a whisk. Stir until it is a uniform mass chocolate and have eggs.
  3. Then give the tablespoon rum and the packet of vanilla sugar and stir the mixture briefly.
  4. Take the bowl out of the water bath immediately. Then set the bowl aside to cool down a little. When the chocolate mass has cooled down, you can stir the 250 g cream into the mass.
  5. Take a mixing bowl and use the hand mixer to beat the 2 egg whites until stiff. Then add the tablespoon of sugar while beating constantly.

  7. For the mousse au chocolat like from the star chef, you now have to fold the egg white with sugar very loosely into the now cooled chocolate mass.
  8. Now fill the finished chocolate mousse into small glass bowls or other dessert glasses and place them in the refrigerator for a while so that the mousse can set.
  9. For star chefs, appearance is almost as important as taste. So decorate the bowls or glasses with physalis, pineapple, chocolate chips or white chocolate sauce. Come up with something creative.
