Red Velvet Cake - a classic of the American art of baking

If you have ever been to an American café, then you are probably familiar with this velvety red temptation - the Red Velvet Cake, also known as the velvet cake. But what does this one do cake so nice red?

  • A modern method of coloring the cake red is food coloring. In many places, beetroot is used to help. This not only provides coloring, but also keeps the cake very juicy.
  • In the classic recipe, however, neither food coloring nor food coloring is used. A real Red Velvet Cake is red due to the chemical reaction between cocoa powder and acid.

A recipe for classic red velvet cake

How's that great cake going now? It's actually not difficult at all. Just be sure to stick to the quantities given and that all ingredients except the Whipped cream, Have room temperature.

  6. Now alternately put some of the flour mixture, butter mixture and buttermilk into a bowl and stir this on a low level with your hand mixer. Start and finish with flour.
  7. Mix it in a mug vinegar and the baking powder. As soon as the baking powder is dissolved, pour the liquid under the dough.
  8. Now you have to work quickly - divide the dough between the two baking tins, smooth it out with a spatula and stick a toothpick in the middle of each. Put the forms in the preheated stove. When the toothpick is baked out, the batter is done.
  9. Let the cake pieces cool down briefly in the pan. Then rush out the parts and let them cool down completely. Then wrap the cake halves in cling film and leave them for at least an hour (but preferably overnight) in the refrigerator rest.
  10. For the glaze, beat the cream cheese and mascarpone creamy with the hand mixer. Stir in the vanilla extract and powdered sugar until everything is nice and smooth. Now beat in the cream with a whisk until the glaze has a thick consistency.

How to assemble the Red Velvet Cake

Now you have made all the preparations to assemble your Red Velvet Cake.

  1. Now first divide the cake halves horizontally with a thread so that you now have four parts.
  2. Place the first piece of cake on your serving platter and pour plenty of glaze on top. Keep layering until all of the cake pieces are used up.
  3. Cover the entire cake with the rest of the glaze - also on the sides.
  4. If you like, decorate the cake with fresh coconut pieces or strawberries.
