Many shy away from baking their own gingerbread. It's not that difficult and can be very easy with the right dough. A recipe without flour, but with lots of nuts and almonds, makes for delicious gingerbread enjoyment like from the bakery.

Ingredients:

  • 500 g hazelnuts, ground
  • 350 g almonds, ground
  • 150 g almonds, chopped
  • 500 g of brown sugar

  • 1 P. Lemon zest
  • 1 pinch of salt
  • 1 pinch of clove powder
  • 1 P. ginger bread spice
  • 1 P. Potash (alternatively 1 teaspoon baking powder)
  • 1 teaspoon honey
  • 8 eggs
  • Baking wafers
  • To cover:
  • 200 g couverture

This dough for gingerbread is really very easy to make, but you should keep in mind when planning that the dough has to stand overnight. It is therefore not suitable for hasty gingerbread enjoyment.

First you make the batter for the gingerbread cookies

  1. In a bowl, mix the hazelnuts, ground almonds, sugar and spices, as well as the zest of peel and potash. Incidentally, potash is the common raising agent for gingerbread and gingerbread dough. Alternatively, you can of course use some baking powder if you can't get potash right now.
  2. Now beat the in a mixing bowl Eggs with the honey and stir in the nut mixture as well.
  3. Then the chopped almonds are folded in. The dough is now ready and must be placed in a cold place overnight.

Simply spread the batter onto the wafers and bake

  1. The next day, cover a baking sheet with parchment paper and preheat the oven to 180 ° C.

Tip: Instead of the peel abrasion, you can also use a little chopped orange peel or peel. Use lemon peel.
Those who prefer the gingerbread cookies to be very fine and not so hearty can simply replace the chopped almonds with the same amount of ground almonds.
