Make Filou dough yourself

  1. First set the dough here. For this you use the flour, the olive oil, the salt and the water and mix into a batter in a large bowl.
  2. Knead the dough well by hand. It is best to do this on a large, smooth surface, such as the kitchen table.
  3. Knead longer rather than too short and make sure that the dough is firm. If this is not the case, you can give in flour. Wheat flour is best. If the batter becomes too crumbly or firm, add a little more water.
  4. Shape a dough ball and let the Filou dough rest for approx. Rest for 20 minutes. The Filou dough should rest in a warm place, maybe on a heater or in a slightly warm oven.
  5. So that the dough does not dry out when resting, it should be brushed with olive oil with a kitchen brush.

  7. Then divide the dough into equal parts, about 8-10 parts for 700 grams of flour. These individual parts are again coated with oil and placed again in a warm place for 10 to 15 minutes.
  8. Now take a piece of dough and roll it out as thinly as possible. This is best done on a clean tea towel dusted with flour. The cloth should be dusted again and again so that the dough does not stick.
  9. When the very thin Filou dough slices are ready, place them on baking paper and always alternate the baking paper with the dough.
  10. The Filou dough is now ready for filling or further processing.

Filou dough filling - a recipe

  1. The filling is prepared separately. The feta cheese, the cream cheese, the finely chopped onion and garlic, as well as the Eggs and the plucked parsley are mixed well in a bowl.
  2. If required, season with salt and pepper and / or chilli and season to taste. Don't forget that feta cheese is often salty.
  3. Now brush the edges of the prepared dough corners with melted butter.
  4. Preheat the oven to 200 C.
  5. Now put 1-2 tablespoons of the cheese filling on the dough and wrap the filling with the dough. You can be creative here and also shape bags. Be careful not to tear the dough.
  6. Of course, the filling can be varied as desired. You can often find spinach or minced meat fillings in Turkish cuisine.
  7. Brush the finished pockets again with melted butter.
  8. Now bake the filo dough bags in the oven until they are golden brown, this can take 20 to 30 minutes, depending on the oven.
