Artichoke cook in a pressure cooker
In the event that you are short on time and still want to cook artichoke, you should cook it in a pressure cooker. You can then serve a delicious lemon dip with it, for example.
Ingredients:
- For about. 4 servings of boiled artichoke:
- 4 fresh artichokes
- water
- salt
- For the right dip:
- 4 tbsp white wine
- 3 tbsp white wine vinegar
- 2 tbsp water
- 2 tbsp tarragon
- 2 tbsp parsley
- 1 shallot
- 10 peppercorns
- 3 egg yolks
- 100 g butter
- a bit of salt
Boil the artichoke in salted water
If you want to cook artichoke, it will be especially quick if you cook it in a pressure cooker.
- Before you can cook the artichoke in the pressure cooker, you must first cut the leaves of the artichoke with scissors. Cut approx. 1/3 third of the leaves off.
- Then cut off the stem of the artichoke as well. You can either boil it or dispose of it.
- Now bring enough in a pressure cooker water for cooking.
- If the water bubbles, you can add salt and then the whole artichoke.
- The artichoke should now be in the pressure cooker for approx. Cook for 10-12 minutes. If you cook the artichoke with a normal saucepan, it must be approx. Can be cooked for 30-40 minutes.

Prepare a dip for the boiled artichoke
While you are cooking the artichoke in the pressure cooker, you can already use the Dip prepare.
- The first thing you need to do for the dip is the vinegar, the Wine and put the water in a saucepan.
- Then add half of the parsley leaves and half of the tarragon leaves to the liquid.
- Next you can chop the shallot and add it to the pot along with the crushed pepper.
- Now cook the ingredients for approx. 10 minutes and then sift them into another saucepan.
- Then place the pot in a hot water bath and stir in the egg yolks until the dip is nice and creamy.
- You can then remove the pan and stir in the butter in small pieces.
- Finally, season the dip with salt and lemon juice and also add the remaining herbs.
- When the artichoke is cooked, you can remove the inner leaves and straw.
Now you can serve the dip and the artichoke.
