Preserving plum jam isn't as difficult at all as you always hear. The oven is particularly useful if you want to prepare large quantities. Here you can process several kilos of plums into puree in a roaster. In this recipe, the fruit puree is refined with aniseed.

Ingredients:

  • 3 kg of plums
  • 500 g preserving sugar, 3: 1
  • 1 P. Lemon zest
  • 2 cinnamon sticks
  • 2 star anise
  • 1 P. Clove powder
  • n. B. some rum

This is how you can prepare plum jam in the oven

  1. First the plums are washed, pitted and cut into small pieces.
  2. Fill this fruit in a large goose roast and mix it with the preserving sugar. For this recipe, preserving sugar 3: 1 is used, if you prefer it very sweet, you can use preserving sugar 2: 1.
  3. Now the spices are added, then the roaster goes into the oven. At 175 ° C, the plum jam has to be put in the oven for about 2 hours. You should make sure that you do not stir the puree. After an hour check whether a skin has formed, then stir it in superficially. You shouldn't do more than that.

The finished puree now has to be pureed and poured into glasses

  1. If the puree is firm enough, the cinnamon sticks and the star anise are fished out first. Then the mass is finely chopped up with a hand blender.

  3. The finished plum jam is now poured into clean, boiled jars and immediately sealed.
  4. If you put on top of the plum jam a little rum reduce the risk of mold growth. After opening the glass, the rum can either be poured off or simply stirred in.
