Honey mushrooms are very tasty and grow in the local forests. They can be prepared and enjoyed without hesitation. In this guide you will learn the easiest way to prepare the mushroom. They also go great with pancakes.

Buy or collect honey mushrooms

  • You will rarely find honey mushrooms in the greengrocer's. However, there are regions in northern Italy or Switzerland where it is already on the menu more often. In Germany, the mushrooms are not yet part of the standard repertoire of shops.
  • The fungi, which live as parasites on trees or on the dead wood of tree stumps, occur - depending on the weather - in local latitudes from July to December. If you really want to find honey mushrooms while collecting mushrooms, your chances are best from August to November.
  • Hallimasch mushrooms are mainly found in deciduous forests, where they usually occur in large groups. The group growth has several advantages for you: You can harvest not just one, but several copies of the delicious mushroom variety.

How to properly prepare mushrooms

  1. The first step in the preparation of the mushrooms is to remove the dirt. Clean the stems, tips and lamellas well with a brush or rag. Then hold the mushroom under flowing water and remove the remaining dirt as well. Do not worry, the fungus will not be swollen with water.
  2. Pick up the knife and cut off the roots of the mushroom; at the same time, separate a thin layer from the skin that is on the stem. Cut the stems and cap of the mushroom into rings or strips. If you want, you can save yourself the cutting and use the Hallimasch without roots in one piece.

  4. Cut the onion into cubes.
  5. Turn on the stove and place a pan on a stovetop. Add a piece of butter and brown the onion cubes until golden.
  6. Add the mushrooms and pepper the honey mushrooms to your taste. Refine your mushroom dish with a few cubes of bacon and let everything simmer for about 15 minutes.
  7. Finally, salt the honey mushrooms and add the freshly cut chives. If you want, you can add a ready-made herbal mixture. Mix everything well, put the dish on the stove for another four minutes and you're ready to serve.

the mushrooms are great as garnish with meat dishes, but can also be wonderfully eaten on a slice of dry bread.

Pancakes with an aromatic mushroom - the dough

  1. Enter the milk with the eggs in a large bowl and whisk the ingredients together.
  2. Then sift in the spelled flour, stir the dough thoroughly and season it with a pinch of salt.
  3. Let the dough stand for at least 15 minutes.

Process mushrooms into ragout - that's how delicious it is

  1. Clean the mushrooms by cutting off the stems and wiping the heads with a damp paper towel. Please do not wash the mushrooms, otherwise they will water down.
  2. Peel the onion and cut it into fine cubes. Then put some butter in the saucepan and sauté the onion cubes.
  3. Add the cleaned mushrooms and some broth and leave the mushrooms in their own juice Cook covered for at least 15 minutes. Never shorten the cooking time!
  4. In the meantime, bake four of the prepared batter pancakes and keep them warm.
  5. When the mushroom ragout is ready, add a dash of cream, season the mushrooms again with salt and a little pepper and fill the finished pancakes with it.
  6. Sprinkle your mushroom pancakes with fresh parsley and serve immediately.

Do not eat the mushroom raw because in its natural state it has light toxins. These can irritate the gastrointestinal area. Serve If you only cook the mushroom after a sufficient amount of time, nothing can go wrong and you can enjoy your delicious mushroom dish without hesitation.

Throw the remains of the processed honey mushrooms, i.e. the roots and the skin, in the organic waste and not on the compost and certainly not in the garden. You should generally do this with all mushrooms. Otherwise, the fungal spores will attack your plants in the garden and cause them to perish. It can also happen that this fungus will grow on your lawn and especially on your trees in the next and subsequent years. It is particularly harmful to trees.
