Tigernuts, also known as tiger nuts or Chufas, are the root nodules of a grass that comes mainly from Africa and the Mediterranean region. Their taste is slightly sweet and is reminiscent of a mixture of coconut and almonds. They are rich in vitamins C and E. They also contain minerals such as phosphorus, magnesium, potassium, calcium and iron as well as unsaturated fatty acids, proteins and enzymes. They are usually available in stores as whole fruits, peeled, as flour or in the form of oil.

Recipe for the Horchata de Chufas

  2. When the almonds have absorbed the water, the rest of the water is poured off and the tiger nuts are placed in a fresh bowl.
  3. Now add 250 ml of ice-cold water and chop it up with a hand blender.
  4. You now have a milky, cloudy mixture that you can refine with a cinnamon stick or a little lemon juice. If you want to enjoy the almond milk straight away, you can continue with the next steps, if not, the mixture has to be put back in the refrigerator.
  5. The liquid is pressed out of the mass for further processing. To do this, you can use a solid sieve and a tamper. However, a clean kitchen towel has also proven its worth. Shape the cloth into a kind of sack and pour the paste into it. Now use the cloth to squeeze the liquid out of the pulp into a bowl.
  6. Now add the remaining 750 ml of water (ice cold) and 125 g of sugar to the milk and mix everything well again.

Now you can put the original "Horchata de Chufas" made from tiger nuts in the jars with cracked ice cream fill and serve.
