Celery: when to harvest and how to preserve it?

instagram viewer

Celery is healthy and has many uses. When you harvest celery and how you preserve it depends on the variety.

Celery is ideal for mixed cultivation in the garden. It doesn't matter what you grew in the same place before the celery, because it's neither with cabbage nor with salad related and therefore makes no special demands on the crop rotation. If you grow celery, it will become more tender if you bleach it (piling it up or placing open-topped vessels over the plants so that photosynthesis is interrupted). Stick or celery is often called celery because of the bleaching process. Celery is an all-rounder in the kitchen: it tastes good as a raw vegetable with a dip, as a salad ingredient or as a seasoning ingredient in cooked dishes such as stir-fried vegetables, soups and sauces.

When is the best time to harvest celery?

  • It is best to harvest celery fresh from the garden as needed. It is ready for harvest from July. Always cut off individual rods so that new rods can grow back. You can harvest it as long as there is no threat of night frost. In late autumn, it is best to cover it with a fleece to protect it from the cold. This will extend the harvest season. As soon as the celery sticks have frost, they will turn glassy.
  • You can temporarily move the celery harvest time indoors and harvest fresh celery until December. To do this, dig up the root stocks and put them in a larger container that you can put in the basement or in the frost-free Glasshouse put up.
  • The main harvest time for celeriac is in autumn. Since it is more tolerant of frost than celery, leave it in the bed as long as possible. It continues to grow even in cooler temperatures.
  • Celery can withstand temperatures down to -4 degrees, only when it gets significantly colder should the remaining tubers be removed from the bed. Until then, it's best to harvest it fresh.
