Pita filled the Greek way

Anyone who has ever eaten in a Greek restaurant or in Greece knows pitas. You don't always have to go to a restaurant or go on vacation to enjoy filled pita. You can also easily prepare pitas at home in just a few simple steps. You can read exactly how this works here.

Ingredients:

  • 400 g of flour
  • ½ cube of yeast
  • 1 cup of water (lukewarm)
  • ½ cup of milk
  • 2 teaspoons of salt
  • 2 teaspoons of sugar
  • 1 tbsp olive oil
  • Sunflower oil
  • oregano
  • Tomatoes (filling)
  • Cucumber (filling)
  • Salad (filling)
  • Onions (filling)
  • Olives (filling)
  • Mint (filling)
  • Thyme (filling)

Here's how to make the pitas

  1. To make pitas, the first thing you need to do is water and the milk Mix. Once you have mixed the two, take about a third of the mixture and pour it into another container. In the remaining two thirds add the sugar and yeast (crumbled).
  2. Now take another bowl and sift the flour into it. Make a well in the flour and fill it with the water-milk mixture with the yeast. From this you knead a pre-dough. When this is done, cover the bowl with a cloth and leave it dough in a warm place approx. Brew for 15 minutes.
  3. In the meantime you can add the salt to the remaining third of the water-milk mixture. When the 15 minutes have elapsed, work the milk water with the salt into the pre-dough. This must now be kneaded for ten minutes until a loose dough is formed. While kneading, add the olive oil and, if necessary, more flour or lukewarm water.
  4. Now divide the dough into eight parts and shape them into balls. Cover the dough balls and let them rise for another 30 minutes in a warm place.
  5. Once the 30 minutes have passed, you can preheat the oven (convection 160 degrees, top and bottom heat 180 degrees). Brush the baking sheet with sunflower oil and roll out the balls into flat cakes. The flatbreads should have a diameter of about 15 cm.

  7. Now the pitas are slowly taking shape. Place four flat cakes on the baking sheet and bake them on the middle rack for four to five minutes on both sides (eight to ten minutes in total). After baking, the flatbreads must still be soft and as white as possible. To prevent the pitas from drying out, wrap them in aluminum foil. Make sure to bake the cakes one after the other, do not add a second tray!
  8. To make the pitas ready to serve, take some olive oil and let it get hot in a pan. Then put one or two flat cakes in the pan and fry each side for approx. two minutes. Finally sprinkle with oregano and the pitas are ready.

Once the pitas have been baked and fried, you can start with the filling. Here you can combine according to your taste. If you don't like something on the ingredients list, just replace it with something you enjoy eating.

  1. Cut tomatoes, cucumbers, onions, salad and put everything in a bowl. Then add olives and chopped feta cheese. To give the filling an authentic taste, add a little oregano, mint and thyme. Finally mix everything with a little olive oil.
  2. If you want something hearty in the filling, fry a piece of fish or meat in olive oil. Cut it into strips and put it in the filling as well.
  3. Now carefully cut the pita open and coat the inside with tzatziki. Now add the filling and the filled Greek-style pita is ready.
